I took inspiration from a classic oatmeal raisin cookie and gave it a Nourish to Flourish twist. They’re the kind of cookie you can feel good about making—and even better about sharing.
Wholesome Oatmeal Raisin Cookies
Makes: 10–12 cookies

Ingredients:
1 cup whole wheat pastry flour or spelt flour
1 cup rolled oats
1 cup unsweetened coconut flakes
½ cup raisins
⅓ cup coconut sugar
1 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon ground cardamom (optional – or sub with extra cinnamon)
½ teaspoon sea salt
½ cup unsweetened applesauce
¼ cup pure maple syrup
1 teaspoon vanilla extract
Instructions:
Preheat oven to 350°F.
In a large bowl, mix all the dry ingredients together: flour, oats, coconut flakes, raisins, coconut sugar, cinnamon, baking soda, cardamom (if using), and sea salt.
In a separate bowl, whisk together the applesauce, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry and stir until fully combined.
Using a ¼ cup scoop, form dough balls and place them on a parchment-lined baking sheet.
Flatten each cookie slightly with damp fingertips to about 3½ inches wide.
Bake for 15 minutes or until golden. Let cool on a wire rack.
Storage: Keep in an airtight container for up to 4 days (if they last that long!).
